Ingredients
- 2 cups cold cooked pasta (any shape will do!)
- 6 eggs
- 1 package frozen chopped spinach, thawed, drained and water squeezed out
- 1 cup shredded cheese of choice
- 1 tsp dried basil
- 1 tsp dried oregano
- Pinch of salt and pepper
Instructions
- Arrange cooked pasta in the bottom of a 9 inch microwave safe pie plate.
- In a large bowl, beat eggs until blended. Stir in spinach, cheese, herbs, salt and pepper. Pour evenly over pasta.
- Microwave on high for 5 minutes.
- Using a fork, gently stir mixture to move around any excess, uncooked egg.
- Microwave on high for another 3-4 minutes or until cooked.
