Spinach Spaghetti Pie

Description

This spinach and pasta frittata is a quick, budget-friendly meal that transforms simple pantry staples into a delicious, protein-packed dish. Tender pasta, nutritious spinach, savoury herbs, and melted cheese come together in a fluffy egg base for an easy breakfast, lunch, or light dinner that’s ready in minutes. Perfect for using up leftover pasta, it’s a versatile recipe the whole family can enjoy.

Ingredients

  • 2 cups cold cooked pasta (any shape will do!)
  • 6 eggs
  • 1 package frozen chopped spinach, thawed, drained and water squeezed out
  • 1 cup shredded cheese of choice
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Pinch of salt and pepper

Instructions

  1. Arrange cooked pasta in the bottom of a 9 inch microwave safe pie plate.
  2. In a large bowl, beat eggs until blended. Stir in spinach, cheese, herbs, salt and pepper. Pour evenly over pasta.
  3. Microwave on high for 5 minutes.
  4. Using a fork, gently stir mixture to move around any excess, uncooked egg.
  5. Microwave on high for another 3-4 minutes or until cooked.
