Please remember the safety tips about using hot liquids in a blender:
- Only fill the blender up ½ way
- Make sure to have room at the top of the blender for air to be released (do this by removing the insert for the lid and placing a clean dish cloth over the hole)
Ingredients
- 3 lbs carrots, peeled and chopped into equal sized pieces
- 2 tbsp olive oil
- 1 onion, roughly chopped
- 2 cloves garlic, roughly chopped
- 1 tbsp ground ginger
- 1 box low sodium vegetable stock or chicken stock
- ½ box of water (fill the stock container with water to about ½ way)
- 4 tbsp skim milk powder mixed with 1 cup water OR 1 can coconut milk
Instructions
- Peel and chop carrots
- Over medium-high heat, add olive oil to a large soup pot
- Add carrots, chopped onion and cook for 4-5 minutes or until vegetables have softened. Add the garlic and ground ginger. Cook for another minute.
- Add the stock and water and bring to boil, reduce and simmer. Simmer for about 20 minutes, or until carrots are soft.
- Remove pot from heat and using either a blender, food processor, or hand blender, puree the soup until smooth
- Once the soup is blended, add the milk and stir to mix. Do not boil.
