Creamy Carrot Ginger Soup

Description

Warm, comforting, and packed with wholesome ingredients, this creamy carrot ginger soup is a delicious way to enjoy a nourishing bowl of goodness. Sweet carrots, savoury onion and garlic, and fragrant ginger blend together into a velvety smooth soup that’s perfect for lunch, dinner, or a cozy meal on a chilly day. Whether made with milk for a lighter option or coconut milk for extra richness, it’s a flavourful recipe the whole family will enjoy.

Please remember the safety tips about using hot liquids in a blender:

  • Only fill the blender up ½ way
  • Make sure to have room at the top of the blender for air to be released (do this by removing the insert for the lid and placing a clean dish cloth over the hole)

Ingredients

  • 3 lbs carrots, peeled and chopped into equal sized pieces
  • 2 tbsp olive oil
  • 1 onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 1 tbsp ground ginger
  • 1 box low sodium vegetable stock or chicken stock
  • ½ box of water (fill the stock container with water to about ½ way)
  • 4 tbsp skim milk powder mixed with 1 cup water OR 1 can coconut milk

Instructions

  1. Peel and chop carrots
  2. Over medium-high heat, add olive oil to a large soup pot
  3. Add carrots, chopped onion and cook for 4-5 minutes or until vegetables have softened. Add the garlic and ground ginger. Cook for another minute.
  4. Add the stock and water and bring to boil, reduce and simmer. Simmer for about 20 minutes, or until carrots are soft.
  5. Remove pot from heat and using either a blender, food processor, or hand blender, puree the soup until smooth
  6. Once the soup is blended, add the milk and stir to mix. Do not boil.
